Lebanese dish eggplants chickpeas
Lebanese dish that combines eggplants ant, chickpeas, and ground meat in a rich tomato sauce. This comforting stew is perfect for a cozy dinner and can be served with rice or bread.
Ingredients
2 large eggplants, cut into cubes
2 tablespoons of olive oil
1 onion, finely chopped
2 cloves of garlic, minced
1 pound of ground beef or lamb
1 can (14 oz) of chickpeas, drained and rinsed
1 can (14 oz) of crushed tomatoes
1 teaspoon of allspice
1 teaspoon of cinnamon
Salt and pepper to taste
Fresh parsley, chopped for garnish
Instructions
1. Prepare the Eggplant: Sprinkle the eggplant cubes with salt and let them sit for 15 minutes to remove excess moisture. Rinse and pat dry.
2. Cook the Eggplant: In a large skillet, heat the olive oil over medium heat. Sauté the eggplant until golden brown and soft. Remove and set aside.
3. Cook the Meat: In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent. Add the ground beef or lamb and cook until browned.
4. Combine Ingredients : Add the crushed tomatoes, chickpeas, allspice, cinnamon, salt, and pepper to the skillet. Stir well.
5. Simmer: Return the eggplant to the skillet. Cover and let the stew simmer on low heat for about 30 minutes, allowing the flavors to meld.
6. Serve: Garnish with fresh parsley and serve hot with rice or warm pita bread.
