Ingredients

1 red bell pepper , chopped

1 yellow bell pepper , chopped

1 cup cherry tomatoes , halved

1 carrot , grated

1 cup baby spinach  or mixed greens

1/4 red onion , thinly sliced

1/4 cup radishes , sliced

1 avocado , diced (optional)

1/4 cup fresh parsley or cilantro , chopped


 Dressing


3 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon Dijon mustard

1 clove garlic , minced

Salt and pepper  to taste


Instructions


1. Prepare the Vegetables: Wash and chop all the vegetables as directed.
